This is a perfect summer salad that's refreshing and will leave your skin glowing.
Don't skip the lemon zest in the dressing. It's such a small step but it's the difference between the dressing tasting sweet and it tasting fresh. The cayenne is optional, I like a tiny kick but you can leave it out.

Carrot
Beta-carotene (Vitamin A)
Converts to Vitamin A in the body, which supports skin cell turnover and can help smooth out rough texture over time.
Pomegranate

Rich in punicalagins, potent antioxidants that help fight free radical damage and support an even skin tone.

Supports collagen production and helps brighten skin, working alongside the carrot's Vitamin A for an inside-out glow.
The salad
The dressing
Ribbon the carrots
Use a vegetable peeler to shave the carrots lengthwise into thin ribbons.
Turn the carrot as you go so the ribbons stay a consistent width.
Prep the rest
Dice the red onion, deseed the pomegranate, and chop the cilantro, green onions, and mint.
Combine the salad
Toss the carrot ribbons with the pomegranate seeds, herbs, and red onion in a large bowl.
Make the dressing
Whisk together olive oil, honey or maple syrup, white wine vinegar, Dijon mustard, lemon zest, lemon juice, grated garlic, cumin, and cayenne. Season with salt and pepper.
Dress and serve
Pour the dressing over the salad and toss well so everything gets coated.
