This is a salad and dip combo we've already eaten twice this week, cucumber, corn, cherry tomatoes, and jalapeño, dressed simply with olive oil and lime.

It's genuinely one of the easiest things in this whole series. Everything gets diced, tossed together, and it's ready, no cooking required.

It holds up well in the fridge for a couple of days, so it's an easy one to make ahead.

How to make it

Dice everything

Dice all the vegetables and combine in a large bowl.

Dress and season

Add cilantro, drizzle with olive oil and lime, and add salt to taste.

Serve

Serve right away, or store in the fridge, it keeps well for about 2 days.
