When dinner is also your skincare, this is the easiest comfort food for glowing skin, a Japanese ochazuke that comes together in about 15 minutes.

Genmaicha is the key ingredient here. Pouring the brewed tea directly over the rice and salmon is what makes ochazuke feel so different from a regular rice bowl, warm, savory, and a little toasty.

You can also find ochazuke packets at Japanese grocery stores if you want to save time or use fewer ingredients.

What you'll need

The bowl (serves 1)

Salmon fillet

Cooked Japanese short-grain rice
1 cup
Loose-leaf genmaicharoasted brown rice green tea
2 tsp
Shredded nori (kizami nori)
1 tsp
Bubu araretiny rice crackers
1 tsp
Green onions or shiso, sliced
1-2
Pickled cucumbers + umeboshito serve
Method

How to make it

Cook the salmon

Pan-fry the salmon until cooked through, then flake into pieces.

Brew the tea

Brew the genmaicha with hot water for a few minutes.

Assemble the bowl

Add rice to a bowl, then top with flaked salmon, nori, and bubu arare.

Pour and garnish

Pour the brewed genmaicha over the bowl and garnish with green onions or shiso.

Serve

Serve with pickles on the side.
