Matcha shows up in so many of the skincare products I use, so I wanted a breakfast version that actually delivers the same benefits from the inside.

The basil seeds are the trick here. They bloom in water almost exactly like chia seeds, giving the oats that same thick, pudding-like texture, plus a good dose of fiber.

Make it the night before and you've got breakfast sorted, layered matcha pudding on top makes it feel like a treat.

Method

How to make it

Bloom the basil seeds

In a glass jar, add basil seeds and bloom with water until they absorb it, then combine with the oats and pistachio milk. Stir in the vegan yogurt and honey.

Chill overnight

Secure the lid and let it sit in the fridge for a few hours or overnight.

Make the matcha pudding

In a small bowl, whisk together the yogurt, matcha powder, vanilla, and honey until smooth and vibrant green.

Layer

Once the oats are set, layer the matcha pudding on top.

Garnish and serve

Finish with your favorite garnishes like fresh raspberries and granola.
